盐与癌症

胃癌

盐摄入量和胃癌密切相关(1,2)(图1),而且可能是胃癌的一个重要诱因。许多加工食品或方便食品(如速溶浓汤、酱油)中的盐浓度对胃有很大的刺激性。有人提出,高盐会破坏胃的上皮细胞,并容易引发幽门螺杆菌感染。
